Long View Ciderhouse partnered with UConn evolutionary biologist Dr. Swapna Subramanian to capture and stabilize wild yeast strains native to Rogers Orchards. Using a combination of traditional winemaking techniques and rapid experimental evolution, we developed Kanavu — a replicable, orchard-specific cider yeast strain with a distinctive tropical flavor profile. This video explains how we did it. This research was supported by a grant from the Northeast Sustainable Agriculture Research and Education program (SARE).
