Paper on nutritional vegetable nutrition of ten species. Samples were taken from Denmark, Sweden, and the United States by an international team of grower-researchers. Eric Toensmeier, author of multiple books and papers on the subject of perennial vegetables and agriculture, is the primary author and has submitted this paper for journal publication. Once this paper has been published, it will be made available publicly as an educational resource. PLEASE DO NOT PUBLISH YET.
