    Eli Rogosa is a farmer-researcher specializing in conservation and on-farm improvement of neglected triticum species. Eli worked for 7 years at the Israel gene bank, Machon Volcani to collect and trial Mideast ancient grains, and is an extension consultant with the Georgian organic farming association  ( between Russia and Turkey) to restore endemic Caucasus Mountain grains. She is an artisan baker of ancient grains especially einkorn, and author of ‘Restoring Heritage Grains', published by chelseagreen.com.
