About
Laura Rolon received her B.S. in Food Science and Technology in 2011 from University of Buenos Aires (Argentina) and obtained her M.S. in Food Science in 2016, from Penn State University. Her thesis work focused on the physical properties and consumer acceptability of reduced-fat vanilla ice cream. She has worked in her home country for the National Dairy Research Institute for 7 years as a product developer, creating new dairy products for the Argentinian dairy industry, including whey-based beverages, lactose-free cheeses and reduced fat ice cream formulations. She held an instructor position at the Technological University in Uruguay, where she taught courses related to dairy processing. Laura is currently a Ph.D. student co-advised by Dr. Kovac and Dr. Roberts, studying dairy facility environmental microbiomes and the application of microbiological methods to improve food safety in food processing facilities.
