Regina is a Ph.D. student studying Food Science at Rutgers University (NJ). As part of the Sensory Evaluation Laboratory, she conducts research in sensory and consumer sciences on a variety of fresh and processed products. Her interests are in taste and aroma perception of fruits, vegetables, and herbs. Current research includes collaboration with AeroFarms, a sustainable indoor farming facility in Newark, NJ, to understand how plant stressors influence the aroma and flavor of baby leafy green vegetables.
