Farmstead cheese is an important value-added product, and the farmer will bring an affineur, or cheese ager, to the area to work with at least ten farmers who seek technical assistance in improving the quality of their product. The focus is on cheese made and aged by a single producer. The affineur will do site visits and advise individual producers, and these individual meetings will be followed by a workshop. The overall goal is a more consistent, distinctive farmstead cheese.
