Proposal summary:
Chevon, or goat meat, is chiefly a niche or ethnic food in the U.S., and this project seeks to expand market opportunities through education, recipe development, nutritional information, and general awareness. The farmer will develop a web site, a brochure, and a series of recipes that have been kitchen tested and analyzed for nutritive value. Outreach will be through health-conscious consumer networks and the web site materials, with the eventual goal of attracting a mainstream market to chevon.
