Proposal summary:
As a licensed cheesemaker and fluid milk producer/processor I would like to set up a training sight at my small commercial dairy. Training sessions in accordance with dairy sanitation laws using the Micro Process Design 25 gallon VatPasteurizer will ensure food safety and peace of mind to the farmer and consumer. Training is necessary for aspiring processors to understand sanitation procedures in order to meet the criteria of the Pasteurized Milk Ordinance (PMO). If proper procedures are followed, small scale processors will be able to ensure the same quality of safe food as larger dairy processing plants. Practical training is imperative in understanding the equipment and the laws.
