    Proposal summary:

    The demand for high quality, imported sheep cheeses in our area is extremely strong but the knowledge to produce these cheeses locally is almost unknown. Our solution is to bring an expert on commercial sheep cheese making from Europe to teach a week-long workshop on the types and handling of special cheese cultures and techniques involved in the commercial processing of the sheep milk and the management of the cheese aging process.
